Exposure and geographic situation of vines : The Syrah land parcel faces due east and consists of very stony limestone soil. The Grenache faces due south on land at 300m in altitude on the lower Larzac foothills just above the village. Limestone, very pebbly soil. The Carignan land is lower, within the commune. It faces south-west in clay and limestone soil.
Harvesting : by family, manually. Grapes picked early in their maturity for additional freshness.
Vinification : Traditional vinification. Destemmed, drained & circulated in early weeks followed by light pressure. Cool pre-fermentation. Short maceration. Matured in vats for 9 months.
Tasting : Delicate, elegant, fruity and light. A real treat served cool as an apéritif through to dessert !
Petitou : a little story !Le Petitou is the Domaine’s most recent birth, so as with our dear children we’ve called it “Petitou”.
